Weight Gain Starts in the Brain

America's favorite foods are pizza, hamburgers and French fries. Nutrition scientists think they know why we like these foods and why they can make us fat.

Researchers wanted to know the answer to this question, "Once you begin eating your pizza or hamburger or fries, what tells you to stop eating?"

Under normal circumstances the body has programmed chemical pathways that tell us at some point during a meal that we are getting full. Food science research has shown that certain fats stop this appetite suppression and for up to three days can allow us to overeat without really knowing it.

Dr. Deborah Clegg of the UT Southwestern Medical Center has studied the effects of a high saturated fat diet on appetite. "What we've shown in this study is that someone's entire brain chemistry can change in a very short period of time. Our findings suggest that when you eat something high in saturated fat, your brain gets 'hit' with the fatty acids, and you become resistant to insulin and leptin. Since you're not being told by the brain to stop eating, you overeat.
